Plural of glutamate; salts or esters of glutamic acid, especially the neurotransmitter that excites nerve cells in the brain.
Etymology
From glutamic acid (discovered in wheat gluten) plus -ate, a chemistry suffix for salts. Glutamic acid comes from gluten + amino acid structure.
