Etymology

Originally from the sound turkeys make (gobble-gobble), which became a verb meaning to eat greedily like a turkey. The word entered English in the 1600s from onomatopoeia—imitating the actual sound of the animal.

Turkeys actually make that 'gobble' sound to establish dominance and attract mates, so when you gobble food, you're kind of acting like a territorial turkey! The word is one of the few where the animal's behavior literally created the word for eating fast.
